So keep in mind that the while the g/f has just gone gluten-free and has always been a full-fat, not diet cook, she is not onboard with the whole Primal gig, but tonight's dinner:

-Half of a 3 pound beef heart, cut into small strips and sauteed medium rare
-A dozen oysters dredged in eggs and crusted in uncooked polenta, then lightly sauteed
-One medium potato (split between us, pan fried)
-One head of bok choy, sauteed

Best part - prior to dinner when cleaning the beef heart, she sliced off the attached fat and tendons, then rendered tallow from the fat. Of the above, the bok choy was sauteed in olive oil. Everything else was sauteed in tallow.

The beef heart was absolutely delicious It was tender, juicy, and a perfect medium rare. Slightly different texture from a lean steak, but not unpleasant.

For those concerned about the cost of eating paelo/primal, the beef heart was $1.68/pound at the Commissary.

Nice, I had to look up polenta. The corn in it is technically a no-no, but considering the amount and the fact that it's gluten free I wouldn't worry. Potato is the same way, technically not paleo, but they are not real high on my priority list to avoid either...

Sounds good! I need to try some beef heart.

Yeah, yeah - not technically primal, but the amounts were small and it kept peace in the house

I've had deer heart in Japan (unknowingly) and it wasn't bad, but I was very hungry and out with locals.

At $4.50 for an almost football-sized hunk of meat and fat that is extremely tasty, you can't go wrong.

Still in the freezer from that commissary trip are beef kidneys and oxtail. I've had oxtail, but kidneys will be something new.

I didn't think you were hassling me. WILCO on the kidneys. Last month she made sweetbreads and I was surprised how tasty they were.

I don't eat liver,kidneys,gizzards or any other internal organs.

But heart is a muscle so its ok and deer heart is oh so good. I will take it over the tender loins any day.

I have never seen beef heart at the local grocery stores.

I made it sound more exciting than it actually was. We got some beef liver, cooked it up (incorrectly probably) and ate it...my wife and I took a bite and shared a look like "sweet Jesus what have we done?!?" all the while we had to try to choke it down because my 4 boys, God love 'em just kept eating it like it was a fuckin t-bone steak. My 7 year old asked afterwards what the "soft meat" was because he liked it .

So...I'll happily try heart, but I'll have to give offal a bit of a break before I try again

No, my wife put something on it though, can't remember what. Uneven cooking was also a problem, so cutting into strips would probably help.

No, my wife put something on it though, can't remember what. Uneven cooking was also a problem, so cutting into strips would probably help.


Yeah, cut it into strips next time (1/2"-1") and pan fry it with olive oil or truffle oil and season with salt and pepper. It will cook more evenly and faster that way. Give it another chance, and if you dont wanna pay for the liver I'll give you some of the grass fed beef liver we have next time youre up here visiting fam. Better yet, I'll cook some for you!

Well shit why didn't I ever think if that. We got like a dozen of them around here that are probably teaming with fresh heart.
