I've been around wing shooting since I was old enough to be bird boy for pops and chase hit pheasants through the milo fields; about 6 years old. Finally bought my first .410 single shot at age 10, yes I had to work and earn $ for my first gun just like my first car(87 camaro IROC). Been wing shooting ever since and have eaten them fried, baked, stewed, grilled, casseroled, poached, bbq'd and so on. My wife marinaded some dove in chipotle tabasco sauce and lime for two days then wrapped them in prosciutto, with whole leaf arugula, jack cheese, a black olive and a jalapeno slice. She then let them smoke over mesquite, got mesquite burning nice and hot then poured water over it causing it to smoke on low heat, and left them in there for an hour or so. OMG were they good. Best bird I have ever tasted. We usually wrap them in bacon with cheese and jalapeno but this is definitely my new favorite. Give it a try! I'm headed back out in a few hours to get my love some more.
